Crustless Quiche for Mother’s Day Brunch

Mother’s Day is the perfect excuse to show gratitude and share a meal made with love. Making your mom, caregiver or any woman in your life a special brunch on Mother’s Day is a great way to show you care. Whether you’re planning a brunch at home or delivering breakfast as a surprise, this crustless quiche is an easy and nutritious way to celebrate. 

It’s packed with colorful vegetables, made with simple ingredients and skips the crust for a lighter meal that still feels comforting and special. Best of all, it comes together quickly and is easy to customize, making it a stress-free option for a Mother’s Day meal.

Ingredients 

  • 6 large eggs 
  • ½ cup milk or alternative milk of your choice 
  • ½ teaspoon sea salt, plus more to taste 
  • Black pepper 
  • 1 tablespoon extra virgin olive oil, plus more for the pie dish 
  • 2 shallots, thinly sliced 
  • 1 cup broccoli florets 
  • 1 cup zucchini, chopped 
  • 1 cup bell peppers, chopped 
  • ¼ cup water 
  • 1 cup sharp cheddar cheese, shredded 
  • 1 tablespoon fresh chives, chopped 

Instructions 

  1. Preheat the oven to 350 degrees and grease a 9-inch pie dish. 
  2. In a large bowl, whisk together the eggs, milk, salt and black pepper until well combined. 
  3. Heat the olive oil in a large skillet over medium heat. Add the shallots and a pinch of salt. Cook until softened (approximately 5 minutes), stirring occasionally. 
  4. Add the broccoli, zucchini, bell peppers, and water to the skillet. Cook until the water has evaporated, and the vegetables are bright and just tender (approximately 4 minutes). 
  5. Transfer the vegetables to the pie dish and spread them in an even layer. Sprinkle the cheese evenly on top. Pour in the egg mixture and gently shake the pan to distribute everything evenly. 
  6. Bake for 30 to 40 minutes, or until the eggs are set. Remove from the oven and allow it to cool slightly. Finish with a sprinkle of fresh chives before serving.
