Comforting Crockpot Chicken Noodle Soup

This delicious Crockpot Chicken Noodle Soup is the perfect comfort dish for chilly winter days. It’s a warm, flavorful, and healthy way to enjoy a nutritious homemade meal with minimal effort.

Recipe 

Ingredients  

  • 1 lb. boneless skinless chicken breast 
  • 1 yellow onion, diced 
  • 4 large carrots, peeled and chopped 
  • 4 celery stalks chopped  
  • 3 cloves of garlic, minced  
  • 4 sprigs of fresh thyme or 1 teaspoon of dried thyme  
  • 1 bay leaf  
  • ½ teaspoon of salt  
  • ¼ teaspoon of black pepper 
  • 8 cups low-sodium chicken broth 
  • 7 ounces egg noodles 
  • Fresh parsley, optional for serving 

Instructions 

  1. Trim fat off the chicken, if needed. Then place the chicken at the bottom of the crockpot. Add the onion, carrots, celery, garlic, thyme, bay leaf, salt, pepper, and broth. 
  2. Cover and cook on low for 6-8 hours or high for 3-4 hours, until the chicken is cooked through (165° F at the center) and the vegetables are tender. 
  3. Discard the bay leaf and thyme stems. Then remove the chicken, let it rest for 5 minutes, then shred it and return it to the crockpot. 
  4. Add the noodles and stir. Turn the crockpot to high, cover, and cook for about 10 minutes, until the noodles are tender. 
  5. Taste and adjust seasoning. Add fresh parsley if you’d like,  and enjoy!
