Recipe – Heart-Healthy Strawberry Pie

Ingredients:

• 1 whole wheat or oat-based pie crust (store-bought or homemade)

• 1 lb fresh strawberries, hulled and halved

• ¼ cup pure maple syrup (or honey)

• 2 tablespoons cornstarch

• 1 tablespoon chia seeds (optional, for added fiber and texture)

• ½ cup water

• ½ teaspoon vanilla extract

• Zest of 1 lemon

• Optional: Light whipped topping or Greek yogurt for serving

Directions:

Bake the crust according to package or homemade recipe instructions. Let it cool completely.

Prepare the glaze: In a small saucepan, combine 1 cup of the strawberries with maple syrup, cornstarch, chia seeds (if using), water, and lemon zest. Cook over medium heat, mashing the berries gently. Stir constantly for 4–5 minutes until the mixture thickens into a glossy glaze.

Remove from heat and stir in the vanilla extract. Allow the glaze to cool slightly (about 5–10 minutes).

Assemble the pie: Arrange the remaining fresh strawberries evenly in the cooled pie crust. Pour the warm glaze over the top, spreading it to coat all the berries.

Refrigerate for at least 2 hours to allow the glaze to set. Serve chilled.

Top with a spoonful of light whipped topping or Greek yogurt if desired.
