Food and Diabetes: Friend or Foe? Mall Walker Program Offers Answers


"Food and Diabetes: Friend or Foe?" will be the focus when the Mall Walkers meet Thursday, Nov. 13. The program begins at 8 a.m. in Luby's Cafeteria at Oak Ridge Mall, with free blood pressure checks beginning at 7:30 a.m.

Sponsors are the Women's Center of Methodist Medical Center (MMC), Luby's, and the mall.

The guest speakers will be Carol Macres Baxter, R.N., director of the Methodist Diabetes Self Management Program, and Kelli Farquharson, a registered dietitian and certified diabetes educator with the program. They will explain how certain foods, particularly carbohydrates, affect diabetes.

Baxter has been associated with MMC since 1986, when she received a bachelor's degree in nursing from the University of Tennessee, Knoxville. She is a member of Sigma Theta Tau Nursing Honor Society, the American Diabetes Association, and the American Association for Diabetes Educators.

Farquharson received a bachelor of science degree in dietetics from the University of Tennessee in Knoxville in 1985. She is licensed as a dietitian in the state of Tennessee and has 12 years of experience.

The Methodist Diabetes Self-Management Program is one of several educational, treatment, and outreach programs affiliated with MMC and Covenant Health. Others include the Employee Wellness Program, Weight Management Program, Smoking Cessation Program, Corporate Health Services, Stress Management Program, and the Women's Center.
