This winter in my 50 Plus classes we have been concentrating on ways to eat healthy foods that have little or no fat. I have been challenging class members to ask questions like the following when they cook:
- Does it add fiber?
- Is it a new vegetable for me, or a new way to serve it?
- Will it get more fruit in my diet?
- Is it, or can it be, lower in fat than my present method of preparation?
We have also been sharing recipes that are good to keep for a few days. Having good nutritious foods ready to pop back in the microwave is a way to make sure you eat foods that will give you energy, fill you up, and are low in fat, sugar, and sodium.
Multi-bean soup
No matter how young or old you are, when it's cold outside hot soup warms both heart and body. And while some soups with heavy cream and tons of cheese can be fattening, many are both nutritious and low in calories. Sally Bishop, a longtime 50 Plus teacher, is very conscientious about making soups that have plenty of fiber and protein but little fat. Here is one of her super recipes: multi-bean soup.
Bag of multi-beans (12 to16 beans depending on brand)
(discard the seasoning package)
Wash beans and soak overnight, covered with 2 inches of water. Drain and cover with 2 inches of water. Bring to boil, reduce heat and cook at least two hours or until tender. Cover, tilt lid.
Add to cooked beans:
1 28 oz. can diced or crushed tomatoes
1 14 oz. can diced tomatoes and green chilies
2 onions chopped and cooked in microwave (6 min. covered)
1 Tbs. oregano
1 Tbs. basil
1 Tbs. parsley flakes
1 tsp. coarse ground pepper
1 tsp. salt
Simmer at least 30 min.
Leave in refigerator overnight to let flavor "bloom."
Reheat as desired. Keeps up to seven days.
