Summertime Super Salad

ummertime is a great time to eat healthy and light with great tasting cold salads. Try to use variety this summer by mixing together all sorts of fresh veggies and fruits. Here is one I made last week:




Missy's Summer Pasta Salad

Boil pasta as called for on the package. I used a cup of tortellini (cheese stuffed) and 1 cup of spiral noodles. Cut up 1/2 onion or a few green onions, 1 red pepper, 1 yellow pepper, 1/2 stalk of broccoli, and 1 carrot.

Mix together with drained pasta then add 1/2 cup of low fat-mayo, 1/4 cup bleu cheese dressing, 1 teaspoon of lemon pepper, 1 tablespoon of capers (optional), 1 can of chunk white chicken meat, squeezes of lemon juice, a little salt and pepper, and sprinkle top with low fat-shredded cheddar cheese, which is optional.

I sometimes have this for an entire meal with mixed fruit or crackers. You can omit the chicken if you want to serve as a salad during a cook out.

Remember these good points about fresh vegetables and fruit:

  • Most have little or no fat

  • They are loaded in nutrients and vitamins

  • They are high in fiber which fills you up and helps prevents colon cancer

  • They are generally low in calories, meaning you can eat larger quantities without gaining weight.

And while you are eating light and healthy, remember to get in your 30 minutes of exercise three to five days per week.
