Missy's Low Cal Lobster Pasta

ur "Get on Track" participants are amazed at how much body fat they can lose through simple lifestyle changes. Two ladies in my Roane county class lost 5 pounds each and 2% of their body fat in just six short weeks! You can achieve your weight loss and body fat goals, too. Just throw out the fad diets and stick to simple fitness and healthy foods. Here's a favorite "light" recipe of mine...

Missy's Low Cal Lobster Pasta

1 package imitation lobster chunks (I prefer the Lois Kemp brand.)
1 small head of broccoli
1/4 - 1/2 red onion, chopped
1/2 tablespoon minced garlic
1/4 cup chopped carrots
1 red pepper, chopped
1/2 - 1 tablespoon lemon pepper
1/2 cup parmesan cheese
1 tablespoon butter
olive oil
noodles

In a little olive oil, stir fry the lobster (cut in bite size pieces), onion and garlic. Remove from heat. In another skillet, stir fry the other veggies in a little oil, a tablespoon of butter and lemon pepper.

Cook your favorite kind of noodles by package directions (enough to make 3 cups of noodles).

Toss everything together and add 1/2 cup parmesan cheese, and a little salt and pepper to taste. On occasion, I sprinkle a little dry ranch dressing mix on top for added flavor.
